Mad Max levels up by getting hallucinogenic dust blown in his face from an unnervingly insightful drifter. From there it's a pretty standard upgrade menu, with a bunch of different ways to spend those "Gryffa tokens" you've picked up while sieging forts and exploring the post-apocalyptic outback.
That's a decent metaphor for the rest of the game, which you can see a decent chunk of in the recorded livestream below: familiar action game mechanics couched in some freaky weird Australian end-of-times kinda stuff. The video lasts more than an hour and follows Max through fort sieges, some nice relaxing wilderness drives, and some Arkham-style combat enhanced with the damage boosting Fury Road - er - Fury Mode.
