Deacons of the Deep
You might expect to fight some clergymen in the Chapel of the Deep, and you’d be right. The Deacons of the Deep watch over this church, and they’re anything but benevolent.

This is just a mob boss consisting of the standard deacon enemies, plus a few heavier versions. They can swipe at you and cast fireballs, but that’s about it. Just stay moving and don’t let yourself get overwhelmed, and this fight should be a cinch.
You might want to start by thinning out the herd a little bit, but the only way to chip away at the shared health bar is to kill the deacon who’s glowing red – your target will change each time you defeat one. Once the health bar falls to about 60%, the “pope” will show up. At this stage, all you have to do is defeat him to drain the rest of the health bar. Just be aware of the extra deacons that join the battle at this stage.
The Deacons of the Deep are only intimidating in numbers. Just don’t get cornered, and don’t lose sight of your real target. Easy peasy.
