On the new officer mode, while playing the "riding" level
After going through the mines choose the path that goes further southward. After going around the fences don't turn off to continue the lap. You will come across a better, faster horse. You con only do this once per session.

How To Unlock Keiji Maeda
Entry location:
After beating the story Western Warriors
To unlock Keiji, beat Wester Warriors with Magoichi or Okuni (I did it with Magoichi.) After beating it a screen will come up and ask if you want to save the game after that screen it'll say what you unlocked and thats how you unlock Keiji.

To get the Tokugawa Army
It takes a while to get the armys, but it took me the longest to get the Tokugawa army. First you have to be Yukimura Sanada's 3rd story. Then you get the Tokugawa army. then there is the rest of the Eastern Forces (Masume Date and Yoshimoto) To get these characters you have to beat Tadakatsu Honda's story. Good Luck!
