GamerBlipsBe warned, though: if you take a player other than a QB, your role - and the corresponding level of control it grants you - is very limited. Everything you do is from that perspective. If you go out to catch a pass and it's not thrown your way, the camera won't change so you can see the ball. You need to turn and look yourself (though it is worth noting that the current-gen versions of Superstar have better camera work than the 360 version.)
