I say there's a few...
Henry Hatsworth has an excellent and highly varied soundtrack and it finally replaced my old Zelda ringtone:

Persona 4 has a really great one and tends to put me in a good mood

Dooms music is a must listen, if you ask me. For being so low quality, they have a lot squeezed into it.

And Earthworm Jim is probably the first game that ever made me stop and go "this shit is awesome"

I'm a huge fan of conductors like John Williams and Danny Elfman and I think the equivalent in video games is Marty O'Donnell. His music is atmospheric and has a epic feel to it.

Mine has to be Ridge Racer Type 4 Direct Audio. I can listen to it any time. Cool jazzy beats with a little taste of electro thrown in. Its pretty old now but I think it holds up well. Jet Set Radio was also a top sound track in my opinion.

More recently maybe Geometry Wars 2 or any game you can play with the sound up. Playing racers and FPSs mean I stick my own music on mostly.

My love for the Sonic Advance soundtrack is reasonably well-documented...

That's some funk in your junk.

That piano solo there is legit, too. I transcribed it and played it for an audition once!

I've yet to play the other Sonic Advance titles, but from what I've heard, the music's not as catchy. Prove me wrong!

I hate to say it about a game that's so recent, but ODST. I love how lonely some of the tracks are, it gives another side to Halo.

I also love the orchestrated feel to SMG, i think it has real maturity in it and just shows Mario isn't all bleepy and bouncy, ESPECIALLY the final battle against Bowser.

And i love the Megaman 2 soundtrack overall, its just got great music and the Woodman theme is just one great part.

I have loads more...

I'll agree with Zabu. The Jet Grind Radio soundtrack is excellent.

I'm not sure if I'll stand alone on this, but I really like Animal Crossing's soundtrack. Its simplicity gives it charm.

I also really like FFVII's soundtrack.

I think Sonic 2 has some of the best music in gaming.

The final boss music, is absolutely amazing.
