We've got 8 locations to get through before wrapping up the case, so let's make a start.

The body is chopped up and stuffed into a bloody sack in the cemetery.

The satchel is on the ground opposite the sack of body parts and will give you the asylum as the next location.
Clue #3 - Seaweed
The seaweed will point you to the river.
Clue #4 - Footprints
I think there's another giant on the loose judging by the size of these monstrosities.

Clue #1 - Statement of Asylum Director
Talk to the director of the asylum to find out about the escaped patient and the diddly squat they're doing about that.

Clue #1 - A Book: Guide to Fish Species
The first of the 3 clues in the cell on the left is this book.
Clue #2 - Fishing Hook
Inspect the area around the mattress to find the fish hook embedded in a dead rat.
Clue #3 - Mattress
Examine the mattress for the last clue in this cell.
Clue #4 - Statement of Asylum Inmate
The inmate is in the second cell on the left.
Clue #5 - Torn Medical Journal
The torn medical journal is on the last cell on the left and will furnish you with 2 more addresses.
Location #4 - Shack
Clue #1 - Pile of Corpses
When you climb over the fence to enter the area, you'll be confronted with a cart brimming with dismembered body parts.
Clue #2 - Leather Straps
These have been discarded on the wooden walkway.
Clue #3 - Cleaver
Check the bloody table in the corner for the cleaver.
Clue #4 - Torn Journal
The fragment of paper is on the ground in front of the shack.
Location #5 - Dock
Clue #1 - Statement of the Fisherman
Talk to the shifty-looking fisherman to add his statement to the case file.
Clue #2 - Human Limb
Have a rummage in the boat to find the severed arm.
Location #6 - Office
Clue #1 - Statement of the Surgeon
Have a chat with the surgeon to collect his statement.
Clue #2 - Statement of Surgeon's Assistant
Speak to Thierry to find out more about his questionable off-the-books jobs.
Location #7 - House
Clue #1 - Statement of Leon Doiron
The husband of the victim mentions that she was last seen heading to the butcher shop.
Clue #2 - Signs of Struggle
Scale the outside of the building to investigate the first floor, because no one has the need for stairs in this place. Examine the mess on the floor for this clue.
Clue #3 - Raw Meat
The sack of raw meat is on the rug.
Clue #4 - Trail of Blood
Interact with the blood trail on the floor for the final clue in this area.
Location #8 - Butcher Shop
Clue #1 - Butcher's Knives
The set of knives is on the bench by the doorway.
Clue #2 - Statement of the Butcher
Talk to the butcher to add his statement to the case file.
Clue #3 - Statement of the Butcher's Assistant
Speak to Simon Larue for the last clue in the case.
Whodunnit?
When one of your suspects is someone who's described as 'definitely not right in the head' and happens to be a dab hand with a butcher's knife, I think we can stop the search - it was Simon Larue the butcher's assistant.
Make a beeline for the butcher shop to confront Simon if you don't want to pick up all of the clues.
